Well today I am going to share with you this great recipe that I recently found on Pinterest of course. I honestly thought it was quite brilliant when I found it and was very excited to try it. And of course my kids LOVED it! They thought Ice Cream for Breakfast was AMAZING!
So are you ready for this . . . . its super simple!
You will need:
yougurt (I used Greek yogurt, I usually buy the big container from Costco and add a little bit of honey)
berries (I used blueberries and raspberries because that’s what was on sale, but any kind of berry would work great)
waffle cones
That’s it.
All you do is layer the yogurt and the berries in your ice cream cone. The trickiest part was once I started to get to the top of the cone the yogurt is still soft or liquidy (is that a word, I’m going to use it today) and wanted to run all over. I then immediately stuck the cones in the freezer. I proped them up using the bars of the shelf to keep them upright. After about 10 minutes the yogurt was pretty firm, I grabbed the foil and wrapped up the cones. Now you can make them and immediately eat them. I however, made up enough for the whole week and stuck them in the freezer so we would have breakfast for the rest of the week.
These would also be a great alternative to ice cream anytime of the day, as it just keeps getting hotter here in Phoenix, its a perfect treat to cool off in the afternoon. And it also would be a great treat for the 4th of July as its right around the corner!
