My Favorite Tried and True Pinterest Recipies

I love it when a blogger posts their favorite pinterest recipes that actually live up to the words behind the pin, so I thought why not do my own?! Here’s a list of a few of the recipes that I keep going back to on pinterest, not only becasue they rock, but they get rave reviews to whomever I serve them to! And let me tell you, I have had many recipes that I’ve tried that do not get rave reviews!
Here goes!
*Low-fat Ranch Dip w/Greek Yogurt from Mommy Savers
This is such a simple “recipe” that I wish I would have tried it sooner! A great staple to bring to parites or have around at home for veggies.

*Slow Cooker Chicken Tacos from Tasty Kitchen

Great for when you need to feed a crowd. When people can build their own to their liking you can’t go wrong!

*Microwaved brown paper bag gourmet popcorn from Squaw Fox

Store bought bagged poppcorn really isn’t the best for you, and sometimes I don’t feel like breaking out the pot on the stove for homemade, so this recipe comes to the rescue!

*Easy OREO Truffles from All Recipes

Yummy!!! Love this super simple chocolate fix. Perfect to bring to a gathering or keep all to yourself!

*Baked Creamy Chicken Taquitos from Chef in Training

I love me some Mexican food, but the grease not so much! In comes baked taquitos and I’m a happy camper!

I will have to do a followup post, since I do have quite a few yummy ones Id like to share! Or I might have to do my pinterest “fail” recipes!

Meal Planning!

Don’t be scared by the title and stop reading just yet!  It’s not scary I promise.  Today I’m going to share how I make my crazy life a little easier each day by having a system for dinner each night.  ohh system, that’s a scary word too, even to me.  But don’t be scared, we can all do it!

So if your life is anything like mine, its been a long day and you’ve been running errands all day and your kids have been screaming and crying and not napping ALL DAY!  And the last thing you want to do is make dinner.  You stare into the cupboards and don’t really see anything inspiring or anything that sounds good. Can anyone else relate? This is a very common occurrence around my house. And then dinner time comes and I have nothing prepared and the children are all screaming because they are starving! Then what? I know for me the only saving grace is meal planning.  I like to plan out 2 weeks at a time. And can I tell you my little secret for meal planning that makes life so much easier, pinterest. I know it sounds silly, but I go through the food I have pinned and then create a separate board for that 2 weeks meals. I am such a visual person, I have to see of picture of it and know what I am making.  Hopefully I am making sense?! Check out this link to my meals for the next 2 weeks. I also like to add in a couple standby favorites at my house. Once I plan out my meals for 2 weeks I do all the shopping for those meals for the 2 weeks, so that all the ingredients are on hand and ready for when the craziness ensues. My crock pot is my best friend, and I use it to at least cook the meat about every night.

To help me from not loosing my mind and forgetting what I had planned to make each night I created a simple chalkboard to write it all down. Really simple, I took a large frame that I had lying around. If it has the glass in it, even better you can use chalkboard paint to paint right on it. I however broke the glass trying to get it out of this frame, so instead I cut, or should I say had my husband cut, a piece of plywood to fit in the frame instead.  I like to use the spray chalkboard paint, it goes on much more evenly.

My frame already had hooks to hold the plywood in, if yours does not you could us a staple gun and staple it into the frame.

And that’s it, now you have a chalkboard.  My husband loves the board because then he knows what he can look forward to eating when he gets home.  And I love it because it helps me feel like I haven’t completely lost my mind every day when I can’t remember what I had planned for dinner.

And today I will leave you with our AMAZING dinner from Pinterest that we had for dinner last night, Sesame Chicken Wonton Cups.  It was so yummy and the kids loved the crunchy and my kids love chicken.  Also great because you can add in veggies and they don’t really notice because its all mixed together.

 

I followed this recipe for the  most part, but instead of mayo, I used greek yogurt, not because I’m trying to be healthy, just because that’s what I had, and I also added peppers.  I also cooked the chicken in the crockpot during the day, so I used shredded chicken instead of cubed chicken, again life in my house is too crazy so anyway to cut a few corners and save some time always helps.  I didn’t have tahini sauce, so I just left it out and it was great.  We will definitely be making it again at our house.

Ingredients: Makes 24 cups. Active Time: 45 minutes. Total Time: 1 hour 40 minutes. To make ahead: Can be prepared through step 3 up to 6 hours in advance.

8 ounces boneless, skinless chicken breast

cooking spray

24 wonton wrappers, about 6 oz.

2 tablespoons tahini

2 tablespoons soy sauce or tamari sauce

2 tablespoons maple syrup

2 tablespoons mayonnaise

½ cup thinly sliced snow peas

½ cup shredded carrot

½ cup thinly sliced scallions

2 tablespoons chopped basil and/or cilantro

black sesame seeds for garnish, optional

Directions

Place chicken breast in a medium skillet and cover with cold tap water. Place over high heat and bring to a simmer. Reduce heat to maintain a gentle simmer and cook until the chicken is no longer pink in the center and cooked through, 8 to 12 minutes, depending on thickness of the meat. Remove the chicken and let cool. Cut chicken into small cubes.

Meanwhile, Preheat oven to 350°F. Coat two 12-cup mini-muffin tins with cooking spray. Cut corners off wonton wrappers to make an octagonal shape. Gently press wrapper down into each cup. Lightly spritz wrappers with cooking spray. Transfer the pans to the oven and bake until the wrappers are starting to turn golden brown and are crispy and bubbling, 10 to 14 minutes. Let cool completely.

Whisk tahini, soy or tamari, maple syrup and mayonnaise in a medium bowl until smooth. Stir in the chicken and refrigerate until cold, 40 minutes to 1 hour.

Stir snow peas, carrot, scallions and herbs into chicken mixture. Divide chicken salad among wonton cups, about 2 scant tablespoons each. Garnish with sesame seeds, if using. Serve immediately.

A Little Christmas Baking

Well it is that time of year for Christmas cookies!!! One of my favorite things about this time of year. Growing up there were always a couple cookies that my mom would make every year. We used to make plates of cookies to take to each of our

teachers and bus drivers, thanks to my mom’s wonderful baking. And today I am going to share one of my families favorite of those wonderful cookies. The even more exciting part of this cookie is that it tastes like fudge but it so so easy to make!!! Are you ready?

 

Peanut Butter & Chocolate Pinwheels

Ingredients: I am showing you how to make a double batch, because these are so easy and you can freeze them until you are ready to eat them or gift them. If you want to make a single batch just use a half a bag of chips and one can total of sweetened condensed milk.

2 cans of sweetened condensed milk
1 bag of peanut butter chips
1 bag of chocolate chips
2 tsp of vanilla
cooking spray
foil
2 baking sheets

 After gathering together all your ingredients, you will want to start by covering your baking sheets with foil and then heavily spraying them with your cooking spray.  Next combine one can of your sweetened condensed milk and the peanut butter chips in a pan and heat on low heat in a pan.  Stir constantly until the chips are completely melted.  Then pour of half of your mixture onto each of your pans and spread into a layer covering the bottom of the baking sheet.  It may not completely cover the entire pan, but spread it as much as you can. Then take your baking sheets and stick them in the freezer if you have space to let them cool down.
 In the meantime combine the second can of sweetened condensed milk and the bag of chocolate chips. Same as you did with the peanut butter chips, stir constantly until the chips are completely melted. Then remove from the heat and add the vanilla. Remove your baking sheets from the freezer and evenly spread half of the chocolate into each baking sheet. Try to spread the chocolate to completely cover the peanut butter layer. When you are satisfied stick your baking sheets back in the freezer to cool.


After about 30 minutes remove your baking sheets from the freezer. Now as long as you sprayed your foil well, this should be easy. Start on the long side of your baking sheet and begin peeling your fudge from the foil and creating a roll.  Once its all rolled up into a log then you can wrap it up in plastic wrap and stick it in the refrigerator or in the freezer.  When you are ready to serve and eat these delicious treats all you have to do is slice them!  And let me tell you they are AMAZING!  Another thing that I usually add to these pinwheels is sprinkles, who doesn’t love some sprinkles.  Before you put on the plastic wrap you can roll the log into some sprinkles, chocolate sprinkles are my preferred, but I was all out.  It is more for decoration, but a nice added touch.

Christmas Tree Pizzas
And today I have one more FUN activity you can do with your kids.  Every year at Christmas time I like to make Christmas tree pizzas.  Last night we were celebrating Christmas with my sister before she heads out of town, so it was the perfect time for some Christmas Tree pizzas.  Now I am all about making things simple at the holidays because things are crazy enough, so I used all pre-bought items.  I usually like to make pizza crust, but lets be honest we all have plenty of other things to be preparing right now, so instead all you need is . . .

Ingredients
pizza crust (I actually prefer to use the Pillsbury crust, its usually found in the refrigerator section by the biscuits and crescent rolls.)
pizza sauce
cheese
pepperoni/salami
any other toppings

So basically all you have to do is pop open the pizza crust and roll it out into whatever shape you want. And please don’t judge my Christmas trees, they were really bad yesterday, but it gave the kids the idea of what they were. We made 2 that way they could each decorate one. While I was putting the sauce on the pizzas and the cheese, the kids worked on the ornaments. I gave them each a couple pepperonis each and a couple small cookie cutters, hearts are what we had this time. And they got busy using the cookie cutters to cut the pepperoni’s into fun shapes, and of course a star for the top of the tree.

When I was all done getting the sauce and cheese on, the kids added the ornaments to their trees and then we stuck them in the oven.


Its really that easy!  And my kids love it!

Baking Party


It seems like many people have some sort of Christmas tradition that involves baking. So many cookies are made, given out and eaten. A friend/coworker and I decided to take a fun twist on the cookie exchange party and host a Christmas Baking Night

with the other ladies from our office. It turned out to be a HUGE hit, they all wanted to make it a yearly tradition. Here is a run down of our party.

The hosts supplied all of the baking staples ie flour, sugar, butter etc. Each guest was responsible for bringing the rest of the ingredients needed to bake there item of choice, like chocolate chips, sweetened condensed milk, peanut butter etx. Each person also had to bring a copy of the recipe for each guest, so we left with not only a few of each cookie, but also the instructions so we could make them again whenever we wanted.

Our group ended up with quite the variety of extravagant treats, cinnamon ornaments, cream filled tortilla wraps, mini cheesecakes, dark chocolate mint crackle cookies and peanut butter chocolate fudge pinwheels.

We gathered after work, ate a quick dinner of take out pizza, all changed into our pajamas and got right to baking. It was a really fun way to hang out and share some family traditions all while enjoying the Christmas music playing in the background. There may have been some dancing and singing into spatulas involved as well.

And just for fun because I am well me, I decided it would be fun to make everyone Christmas aprons for the event. They turned out quite good if I do say so. The girls all LOVED them and I have to give a huge thanks to my mom who helped me a TON with them over Thanksgiving break. Chocolate Chip Pie

Today I was working on getting a very fun Christmas project ready to share with you, but unfortunately I ran out of spray paint and will have to get to the store to finish that project. So that will have to wait for next week, but instead I’ve been working on getting together a meal to take to a friend who just had a baby. My go to dinner to bring to friends is BBQ Chicken Pizza, which I will also have to share that recipe one of these days, its a family favorite around here and our typical birthday meal. Today I’m going to share a very yummy, super, super easy dessert! Are you ready, you better not turn away or you may miss it.

All you need is . . .

A store bought graham cracker crust
1/2 cup flour
1/2 sugar
1/2 brown sugar
3/4 cup of softened butter
2 eggs
1 cup of chocolate chips

Mix the flour, sugar, brown sugar, butter, eggs and chocolate chips all together and then pour it into the graham cracker crust. It’s really that simple.

Bake at 325 until golden brown. I prefer to take it unbaked so that the recipient’s can eat it warm and gooey.
Chocolate Chip Pie -preheat oven to 325 -beat 2 eggs -add 1/2 cup of all purpose flour, 1/2 cup of sugar, 1/2 cup of brown sugar, 3/4 cup of softened butter, and 1 cup of chocolate chips. bake it in a graham cracker crust! AMAZING.

Cinnamon Chip Scone

Ingredients:

3-1/4 cups all-purpose flour

1/3 cup plus 2 tablespoons sugar, divided

2-1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

3/4 cup cold butter, cubed

1 cup buttermilk

1 package (10 ounces) cinnamon baking chips

2 tablespoons butter, melted

Directions:

In a large bowl, combine the flour, 1/3 cup sugar, baking powder, baking soda and salt. Cut in butter until mixture resembles coarse crumbs. Stir in buttermilk just until moistened. Fold in chips.

Turn onto a lightly floured surface; knead gently 10-12 times or until dough is no longer sticky. Divide in half; gently pat or roll each portion into a 7-in. circle. Brush with butter and sprinkle with remaining sugar.

Cut each circle into six wedges. Separate wedges and place on an ungreased baking sheet. Bake at 425° for 10-13 minutes or until lightly browned. Serve warm.

Your family, friends and coworkers will soon thank you, I promise.

Baking Season

Have you noticed lately that it is baking season? It may still feel quite hot outside….if you are here in Phoenix, but fall is literally right around the corner. All the grocery stores have pulled out all of the seaso

nal baking supplies. Isn’t it glorious?! First up on my fall baking list is Snickerdoodles. They may be just a normal year round cookie to you, but to me the sweet smell of cinnamon just screams fall.

Have no fear I am here to share the goodness with you. Well if you happen to live in my apartment complex that is – feel free to stop by for a cookie. If not then you will have to settle for the recipe and making them yourself.

Ingredients:

(for the topping)

3 tablespoons sugar

1/2 teaspoon cinnamon

(for the cookie dough)

3 1/2 cups flour

1 tablespoon baking powder

2 teaspoons baking soda

1/4 teaspoon salt

1/4 teaspoon cinnamon

1 cup butter

2 cups sugar

2 eggs

1 tablespoon light corn syrup

2 1/2 teaspoons vanilla extract

Directions:

In a small bowl, stir together the sugar and cinnamon and set aside.

To make the cookie dough, stir together the dry ingredients.

In a bowl with a paddle attachment, cream the butter. Add the sugar and continue to mix, then add the eggs, corn syrup, and vanilla, and mix thoroughly. Add the dry ingredients and mix until blended. Chill dough 1 hour if it’s stick or difficult to handle.

Preheat oven to 375 degrees

Roll balls of dough about the sie of a walnut then roll them in the cinnamon sugar to coat. Place on an un-greased sheet pan. Bake for 10 to 12 minutes until puffed up the surface is slightly cracked. Let cool on the pan a few minutes before removing to a wire rack to cool.

After they cool you can put them on a pretty plate and enjoy! Or share them with your neighbors and coworkers – I promise they will love you for it.

A Guest Blogger & Stuffed Mushrooms!

Today we have a very special guest post from one of my very bestest friends Natalia from Ma Nouvelle Mode.  I hope you all enjoy and make sure you stop by her blog and say hi!
Hello Junk in the Trunk Trio readers!!  It is lovely to meet you!  Thank you to these three lovely ladies for allowing me to guest post.  Lindsey and I actually go way back.  We were besties in our college years.  Oh, the memories!! Some of my best!
But for those of you who don't know me, my name is Natalia and I blog over at Ma Nouvelle Mode. If you are wondering what that means, it is French for 'my new style.' Now you are probably wondering “why French?”  Well, it just so happens that I am living here in France with my husband and two boys. My husband plays basketball here, and the boys and I are his biggest fans!
Over at my place, you can find a mix of fashion, beauty, hair, makeup, some recipes and of course some of our crazy life of traveling the globe.  I do like to get crafty but living over here doesn't always allow for craftiness.  For one, we move every year.  And second of all, they don't have Joann's or Michael's here.  Just one craft store in my city and it's availability is not so great.  So I thought I would share a recipe with you all!
This recipe is for stuffed mushrooms.  I absolutely love it.  It is so easy.  My husband doesn't like mushrooms, so I make it when we have company.  Then I eat all the leftovers by myself.  mmmmm yummy….
So here we go!
Clean the mushrooms with a damp paper towel or cloth.  Not under water, it will ruin the mushrooms.
Then pluck the stems out of the mushrooms and dice them up.

and then add the garlic and mushroom stems.  Cook until everything is cooked through.  Drain off excess oil if needed.  (you can see that I needed to!)

Add cream cheese.  It is hard to convert measurements because I make this with French ingredients, but it was about 300 grams.  Does anyone know what that is?
Then you can proceed to stuff the mushrooms!  Get that stuffing in there, be generous!  Let it overflow on top, it will mostly stay and if some fall, not to worry, it is still edible for sure!
After they have been stuffed, place them in a baking dish and fill the bottom with a little bit of water.  This will prevent the mushrooms from drying out during cooking.  You will also want to baste the mushrooms with butter before baking as well.

Pop them in a 350 degree oven for about 15 or 20 minutes and voila!!  You have a very easy, very yummy appetizer!

Family Project Night

As a family we have been working really hard to turn the tv off at night and having family time instead.  So last night was family project night in our house.  The first thing we decided to work on was painting some clothespins.  This has been a project that has been unfinished for a very long time.  I don’t know if you remember my frame wall, if not you can refresh your memory here, but it is about time to finish it up.  My kiddos love to paint, so what better way to get a project finished then with a little help.
First I of course gathered together my supplies: some clothespins and paint and paintbrushes and of course some paint shirts for the little painters.
And then let them get to work!
All their hard work!
I let the clothespins dry overnight to ensure they were completely dry and then hung them on the wires in the frames!  And then added my pictures!  What do you think?
What’s funny is, I printed out the pictures out a long time ago now, so they are quite outdated already.  I guess I will need to update the pictures before too long anyways!  And there you have a completed frame wall!
And then we got to work on our 2nd, quite delicious project of the night!  Carmel apples!
Its very simple really, a few apples, a bag of carmels (which is supposed to come with sticks, but ours did not so we used plastic knives instead) and some candies (we used carmel candy corns and nerds).
First things first, you must unwrap all the caramels.  A perfect task for little hands!  While my husband stuck the plastic knives into the apples.
Next on medium to low heat in a saucepan heat the caramels with 2 tablespoons of water.  Simple enough.  And continuously stir until the caramels are complely melted.
Next dip the apples into the caramels and pass of it off to be rolled in the candies!
Then let them refridgerate for at least an hour.  We actually are going to eat them tomorrow.  With the leftover caramel we cut up one more apple to share and let the kiddos go to town!  They were very excited to eat the leftovers!
